Blue Cheese & Walnut Tart

A sophisticated tart combining creamy blue cheese, caramelized onions, and toasted walnuts in a buttery pastry case.

Rustic blue cheese and walnut tart with fresh herbs

Ingredients

  • 1 shortcrust pastry case (23cm)
  • 200g blue cheese, crumbled
  • 3 large onions, thinly sliced
  • 100g walnuts, toasted and chopped
  • 3 eggs
  • 200ml heavy cream
  • 2 tbsp fresh thyme leaves
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar

Instructions

  1. 1. Caramelize onions with butter and balsamic (30 mins)
  2. 2. Blind bake pastry case at 180°C (15 mins)
  3. 3. Toast and chop walnuts
  4. 4. Whisk eggs with cream and thyme
  5. 5. Layer onions, cheese, and walnuts in case
  6. 6. Pour over egg mixture
  7. 7. Bake at 170°C for 25-30 mins until set

Chef's Notes

  • Use a strong blue cheese like Roquefort or Gorgonzola
  • Can be served warm or at room temperature
