Cheddar Scones

Buttery, flaky scones packed with sharp cheddar and fresh herbs. Perfect for breakfast or afternoon tea.

Fresh baked golden cheddar scones

Ingredients

  • 300g self-raising flour
  • 1 tsp baking powder
  • 75g cold butter, cubed
  • 150g mature cheddar, grated
  • 2 tbsp fresh chives, chopped
  • 1 tsp dried thyme
  • 150ml milk
  • 1 egg, beaten (for glazing)
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 220°C (425°F)
  2. 2. Mix flour, baking powder, and seasoning
  3. 3. Rub in butter until mixture resembles breadcrumbs
  4. 4. Stir in cheese and herbs
  5. 5. Add milk to form a soft dough
  6. 6. Pat into a circle and cut into 8 wedges
  7. 7. Brush with beaten egg
  8. 8. Bake for 12-15 minutes until golden

Chef's Notes

  • Use extra mature cheddar for stronger flavor
  • Keep ingredients cold for flakier scones
  • Best served warm from the oven
