Cheddar Scones
Easy 20 mins prep 15 mins cooking 8 scones
Buttery, flaky scones packed with sharp cheddar and fresh herbs. Perfect for breakfast or afternoon tea.

Ingredients
- 300g self-raising flour
- 1 tsp baking powder
- 75g cold butter, cubed
- 150g mature cheddar, grated
- 2 tbsp fresh chives, chopped
- 1 tsp dried thyme
- 150ml milk
- 1 egg, beaten (for glazing)
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 220°C (425°F)
- 2. Mix flour, baking powder, and seasoning
- 3. Rub in butter until mixture resembles breadcrumbs
- 4. Stir in cheese and herbs
- 5. Add milk to form a soft dough
- 6. Pat into a circle and cut into 8 wedges
- 7. Brush with beaten egg
- 8. Bake for 12-15 minutes until golden
Chef's Notes
- Use extra mature cheddar for stronger flavor
- Keep ingredients cold for flakier scones
- Best served warm from the oven
