Ingredients

  • 1 pie crust (homemade or store-bought)
  • 200g Gruyère cheese, grated
  • 150g Emmental cheese, grated
  • 50g Parmesan cheese, finely grated
  • 4 large eggs
  • 240ml heavy cream
  • 240ml whole milk
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 375°F (190°C)
  2. 2. Blind bake pie crust for 15 minutes
  3. 3. Whisk together eggs, cream, milk, and seasonings
  4. 4. Layer cheeses in the crust
  5. 5. Pour egg mixture over cheese
  6. 6. Bake for 45 minutes until golden and set

Chef's Notes

  • Let quiche rest for 15 minutes before serving
  • Can be served warm or at room temperature
  • For extra richness, use all heavy cream instead of milk
