Creamy truffle mac and cheese with crispy top

Ingredients

  • 500g macaroni pasta
  • 250g Gruyère cheese, grated
  • 250g aged cheddar, grated
  • 100g Parmesan, grated
  • 60g butter
  • 60g flour
  • 750ml whole milk
  • 2 tbsp black truffle paste
  • 1 tsp truffle oil
  • 100g panko breadcrumbs
  • Salt and white pepper to taste
  • Nutmeg, pinch

Instructions

  1. 1. Cook pasta until al dente
  2. 2. Make roux with butter and flour
  3. 3. Gradually whisk in warm milk
  4. 4. Add cheeses and truffle paste
  5. 5. Season with salt, pepper, and nutmeg
  6. 6. Mix with pasta and transfer to baking dish
  7. 7. Top with breadcrumbs and remaining cheese
  8. 8. Bake at 180°C for 25-30 minutes until golden
  9. 9. Drizzle with truffle oil before serving
